Coconut Purple Sticky Rice pudding

Ingredients
Purple Rice
1 Cup(200g)
Mango
1Pcs
White Sugar
20g
Coconut Cream
200ml
Gula Melaka
30g
Salt
A pinch
Instructions
1.
Add 1 cup of purple rice to the inner pot with 3 cups of water. Soak overnight.

Add 1.5 cups of water into the cooker. Add the white sugar into the purple rice and place the pot into the cooker. Cover and switch on flick the middle switch down. After the switch has flicked back up, carefully remove the lid and mix in white sugar.

For the sauce, add some water into a pan with the Gula Melaka and a pinch of salt(optional), stir constantly over low heat, add water as necessary till desired consistency. Once fully dissolved, set aside to cool for later use.

Finally Dice the mango and the dessert is ready to be assembled. Scoop in the Purple rice, followed by the Gula Melaka sauce and finally the diced mangos and coconut cream on top. Serve immediately, alternatively the purple rice can be refrigerated and served cold at a later time.
